Beet and Vodka cured Hamachi

My favorite dish I have tasted recently was the beet and vodka cured Hamachi at Lumiere. It is a generous portion of high quality Japanese Amberjack sashimi (Hamachi), that is cured in vodka and a beet reduction then garnished with caviar, and assortment of different colored beets and a Horseradish cream that provides an excellent expansion into the already complex and elegant flavors.

If you enjoy Sashimi this is an excellent choice if you visit Lumiere.
